Ingredienti per 4 persone


coratella di capretto

100 g di olive nere sotto sale

aceto

2 cipolle

½ bicchiere d'olio extravergine di oliva

una foglia di alloro

sale e pepe


Preparazione

Pulite minuziosamente in acqua fredda corrente la coratella e tagliatela a pezzi; tagliate le cipolle a fettine e rosolatele a fuoco leggero, in una padella con olio; aggiungete le olive, la coratella e la foglia di alloro; ora mettete sale e pepe.

Cottura a fuoco vivace, mescolando continuamente; appena raggiunta una buona doratura, condite con l'aceto. Terminate la cottura, e servitela.
